The fact Chloe's father doesn't have a confirmed first name does complicate things somewhat, but changing his tag as well could help prevent unnecessary confusion.
I watched the entirety of Pokemon Journeys and don't recall Chloe being referred to in a way which included her family name, even if the implication is that being the case. Assuming we wanted to go ahead with using her full name, though, it seems odd to not also make the same change for Talia and Parker who are in the same situation.
Including her father's profession title in the tag name would make him an anomaly amongst the other professors without known given names (Elm, Birch, Rowan etc...), but you're right that it's technically ambiguous. Given there are no cases of him being mistagged, though (as seen here), I wonder whether the change is truly needed.
This took a bit of digging to find, but Chloe does share her father's last name, both in English and Japanese. I don't think Parker and Talia are ever referred to by their full names. As for Professor Cerise, I do admit that changing his tag would be a bit inconsistent. I really only included that BUR because of the aforementioned ambiguity, but I agree it doesn't need to be changed per se.

I think it's a good idea to move the professor tags to professor oak etc tbh, I think that's what most people know them as. Also i cannot believe our tag really is Samuel Oak...
But yeah, we either rename all of them or keep them all the same.

The tagging practice for Pokemon characters up until now has typically been that we use full names when a character has them, and *_(pokemon) otherwise (ex: Ash Ketchum, Blue Oak, Todd Snap, Steven Stone etc..). It's just that most characters don't have more than one name.

With the exception of Blue Oak (which is its own can of worms), these characters' full names are readily thrown at the viewer multiple times. Nobody has to hunt down a voice line from episode 117 at 13:46 to find them - instead, you immediately get stuff like "Oh, that there's Steven Stone," or "Hi there! My name's Todd Snap!"
It's worth noting that Bulbapedia's article names for these other characters are Steven Stone, Ash Ketchum etc. while Chloe's is still just Chloe. They do list her full name on the page, but they're well aware that people just know her as "Chloe", which is why it's an extraneous detail in her profile rather than a part of the page's name.
