We don't use non-standard characters, I know you know this. Umlauts certainly fall into this category.

As a native German speaker, ü -> ue always looks weird to me, but it would be acceptable.
Current policy is to leave characters as-is, just removing diacritics/accents/whatever. So munchen in this case.
