I mean, if you seriously want to talk about immortality like this then, barring marrying another immortal, what you're talking about is something like going through lovers the way that most people go through pets - you get over the loss of your last pet by getting a new one. You don't dwell on the old, you love the new, because loving your dead dog/cat doesn't mean you can't love another. (If you can't be with the one you love, love the one you're with.)

Well... in folk tales, impossible tasks are usually the nice way to say "fuck off, not interested" instead of real requirement. If she likes the person, she could just give very simple task.
