I blame Newt; when he engaged in a neural handshake with the Kaiju's secondary brain, it was a two way street: he learned about the Kaiju more than anyone else ever had at the time, and the "masters" learned about the trio; Cherno, Typhoon, and Eureka.
The "masters" in turn created those two Kaiju specifically designed to deal with them; Otachi would rip asunder Typhoon with it's own third arm and melt through Cherno's armor with it's acid, while Leatherback would come in and finsh off Cherno, and shutdown the electronic systems in Eureka using that powerful shockwave.

This actually is the most reasonable answer I've seen, plot wise. As for Gypsy able to take 2 out (at least 1 at a time), I got to assume it's because they saw what both can do, and thus focused on taking down their most dangerous attacks (LB's EMP flowerback & Otochi's Tail & Acid spits)

If this is true, Newt knew way too much about the Jaegers, and this sort of thing is exactly why military and intelligence organizations apply a "need to know" principle regarding sensitive information.
Of course, given the budgetary constraints that the Pan Pacific Defense Corps was operating under at that point, Newt and Hermann were the only sciency types they could afford. Hermann seems more likely to have been the Jaeger technology expert, but the two probably talked business to the extent that they could stand each other's company at all.

I thought it was Newt who was more of the Jaeger expert, as he seems to watch every fight (ok, he loves Kaiju biology more, hence why he would be watching all the fights and learning how each of the Kaijus function and on the sideline, know how the Jaegers fight). Hermann is more on numbers than anything else.

I get where you're coming from, but I blame the pilots first and foremost. Typhoon and Alpha apparently did the same thing in every fight. What's the first thing the Wei's do? Thundercloud formation. What are they known to use in every fight? Thundercloud formation. The Kaiju kept evolving based on previous fights with Jaegers. The hivemind let every Kaiju know what to expect from a Jaeger. If you're entire battle strategy becomes predictable, than it's easy for the enemy to prepare a strong counter; like we saw with Otachi and Leatherback.
Although the discussion is long past, I blame the fact that Cherno Alpha, Crimson Typhoon and Striker Eureka were all very well experienced with the newest of the three, Striker, having I think 10 kills under its belt by the time of the movie. I also blame the fact that the Kaiju are linked telepathically or otherwise as demonstrated by Newt. And I also blame the fact that Kaiju were essentially weapons produced by smarter beings as we saw at the end. So basically what Solo061 had said. Otachi and Leatherback were specifically designed to counter those three based on past battles. They didn't need Newt to tell them anything. They did however need to get Newt so that he doesn't give humanity any information that they could use to their advantage.

I honestly blame the script for the movie. You can say that they did the same every fight. But I doubt that increasingly tougher and specialized Kaijus that have taken down the rest of the Russian Jaeger group were taken down that easily, even if Cherno always started with it's "charge and punch tactics".
We need more info, because I am pretty sure that most Kaiju don't die from a single punch and they (the Cherno Alpha pilots) had more than enough tough fights on their shoulder to know to not charge blindingly into a 1vs2 fight. : /
