(Although technically, only the (unplayable) Pope gets to call crusades, so it's out of your hands. If you're Muslim or Reformed Norse or some of the other more organized-war religions where the player can be the religious leader, though, you can make targeted Great Holy Wars of your own choosing once per leader, though. But if Italy (and in particular Rome) isn't Catholic, though, it's absolutely the first place that will be hit with a Catholic crusade.)
