And they made them first, so they became the most ingrained association. The aforementioned MOAB, or most any fuel-air explosive, also create a mushroom cloud due to their impressive overpressure capabilities, which the majority of observers mistake for a nuclear explosion.
Protip (hopefully left unused, unless Iran tries to something stupid): a nuclear mushroom is still hot as it rises, so it gives off a more reddish tint, compared to the FAE cloud, which cools off much faster, so the cloud doesn't glow (as much, if any).
