I've been wondering that since Riza Hawkeye. If it is an "impossible" hairstyle, it's certainly a simplistic one compared to some of the other zaniness character designers come up with.

Not impossible, but it's also a simple one.
Internet prefers the more glamourous styles to cover.

It's like low ponytail, then folded up and secured by clip to the hairs at the back of the head.
