Why is she tagged as Uchiha Sarada? The ending made it clear that Sasuke and Sakura are not at all a couple, so shouldn't she take the last name of her mother who takes care of her?

First of all, the ending only made it clear that Sasuke is away somewhere. Not that he left, not they they split up, he could just be out for a job, none of that is clear.

Secondly, that's the name everyone else is using.

We're not really privy about the naming conventions in the Naruto universe, but using Sasuke's surname is a valid assumption in this case.

That, and it makes for easier tagging. I mean, both Bolt and Himawari both have Naruto's surname, when in the real world, it would be MORE likely for them to carry Hinata's surname, as Naruto would be marrying into the Hyuugas.

Considering Naruto's basically Ninja Jesus, I'm sure the Hyuugas wouldn't mind.

The Uzumakis are also supposed to be a top tier Clan. I don't believe the Hyuugas would really mind and Hinata isn't even the head anymore. That role went to her little sister.

Actually it did not, Hiashi has reprimanded Hinata on her weakness and has said that Hanabi has more potential or skill than her, but he has never out right said Hanabi will be the next head. I will note however he has said he doesn't care what happens to Hinata to Kurenai but that was back when he thought she was useless. She's obviously grown since then and has proven to be more capable than he imagined.

It is also evident that she does not have the caged bird seal on her forehead, and since she has already produced 2 children she is likely locked into the head heiress position now while Hanabi is back up. Though it would also be possible that her children could succeed her if she did pass on, assuming Bolt would be considered worthy.
