Yamato originally also had four triple 155 mm turrets from the Mogami-class light cruisers (which were then converted to heavy cruisers with 203 mm twins) So she could carry more than just the extra weight of her three main turrets.
Kashima was pretty much brand new in terms of IJN ship age when it comes to WWII, unlike Grandma Glaive there. Yuubari's a decade or two older and built for top speed (i.e. big engines with less overall weight). Given Kashima was built for the purpose of being a training ship then converted to a command ship, I guess she may have had more redundancy or somesuch...but that's just speculation on my part.
After reading bismarck+prinz on wiki, kinda understand why putting more lightweight guns than heavy one with broadside position. I guess the rate of fire per min can really decide who got shot first. Heavy one can deal more dmg if hit but lower fire rate
And then I'm wondering if all battle formation in kancolle are actually broadside or not

That's what engagement profile (the one decided at the start of battle) represents. If you get green T (you crossed the enemy's battle line) then your formation is considered able to get all their guns in a broadside.
