Pretty sure it's にぎにぎ -> にぎる -> The hand motion one does when they press the rice and make onigiri.

I see, why double "nigi" though, I thought it was an onomatopoeia for a moment. And does "たまらん" mean "can't get enough of"?

Online JP dictionary stated that it's more childlike when doubled up (kinda like お手て).

And yes, たまらん -> たまらない -> usually means can't get enough of / irresistible, when it's not used in the sense of unbearable (i.e. unbearable workload)
