Lions are associated with nobility (the attribute/concept and the social class) and Christ in medieval society (nobility too in a lot of other societies, even in different cultures and religions). More particularly, a lot of Arthurian characters are associated with lions, and King Arthur is specifically linked with the image of a crowned lion (not to be confused with the "Crowned Lion of Libya") in prophetic dreams. Lancelot-Grail mentions it, IIRC in either Part 2 or Part 3 (or possibly both). The section I recall was about King Lot having dreams of lions fighting each others, with one side being crowned (crowned lion leading crowned lion cubs) and the other side not. Merlin later interprets the dream as an allusion to King Arthur's reign (with Arthur being the crowned lion).

Oh and the Prose Merlin also has a section (Merlin and Grisandolus) where Merlin (under disguise) provides to the Emperor of Rome an explanation of the latter's dream, again using the crowned lion imagery. This one I recall specifically from which section of the Prose Merlin (and it's in Late Middle English instead of Old French), so I was able to locate the relevant lines:

"Ye," quod he. "I tolde yow right now of the lyon crowned and of the lyon volage; but now shall I telle yow in other manere for that ye shull be better remembred whan tyme cometh. emperour of Rome," quod he, "this is trewe prophesie, that the grete boor of Rome, that is signified by the grete dragon, shall go agein the lyon crowned of the Bloy Breteyne, agein the counseile of the turtell that hath an heed of golde and longe hath ben his love. But the boor shall be so full of pride that he will not hir beleve, but shall go with so grete pride with all his generacion into the parties of Gaule to fight with the crowned lyon that shall come ageins hym with alle his beestes.

...where the lyon crowned ("crowned lion") refers to Arthur while the lyon volage ("fickle lion") refers to Gawain.
