That guy was dying from his body not keeping up with how often he's killed/sustains a fatal wound. This guy here is more on the line of being poisoned away by what is inside and the accumulated damage he takes in battles.

Wasn't a big plotline of Logan about how Logan was slowly being poisoned by the admantium coating his skeleton, thus slowly rendering his healing factor ineffective? Been a while since I watched it, but that's what I remember.

That's what he seems to think through out the movie. But Adamantium is just metal, it should have already been poisoning him him long before that movie starts. Yet, we still see him in all those other X-men movies without care about it. Why? His healing factor is working just fine. But, because he regenerates, not turning back to have the wounds go away, his genes expressing as healing factor is going to be damaged rendering him having slower heals. This proves true since Logan isn't healing back to his primes, as he always did. And metal poisoning, assuming his adamantium skeleton is poisoning him, should be showing in much, much, much different way than Logan's pretty-much-a-man-in-his-50s-perfect condition. The doctor seems to think he's poisoned by something too. But if he thinks it's metal poisoning from the metalic skeleton, he should already knew the moment those claws show.
Well, it's speculation, but backed by my knowledge in medical science (even if it's not much). However, adamantium poisoning is only Logan's speculation too. Not like he has a certificate in the field of doctors. He can very likely be wrong.

Yeah I'd be willing to say his regeneration being as impressive as it is delayed the effects of aging and is just now starting to stall. Shame we didn't have Saber tooth to compare in a way.

Well, without him constantly getting killed or killing himself, or sustaining wounds every movie, he might not have had his healing face stalled by Logan.
Causality's wrong. He was starting to feel the effects of the metal poisoning he was always supposed to have because the healing factor was starting to fail.
Actually, I don't think he's having metal poisoning. How normal he was during the trip, especially at the pump station is not like a guy having metal poisoning. And he's not at his prime either. I don't mean age age, I mean physical age. In earlier movies, he always looked like he was only 20~30 at most. But in Logan, just from the trailer you could tell he's supposed to be in his 50s of physical age. If that's not his healing factor not holding up anymore, I wouldn't know what it is.
Most likely, the director/producers/writers/etc simply didn't look too deeply into what metal poisonings actually look like, assumed the audience would not know, or assumed that accurately reproducing the symptoms of some form of metal poisoning would get in the way of the other parts of the story they wanted to tell/ would not be as fun for the audience. Or some combination of all three. Probably the safest assumption to make.
