I recently replayed the game. I concluded during the fight with her in the arena, her taunt ability's main purpose was to develop her character. She loved fighting there and pleasing the crowd. The arena's main point wasn't to hold strict competitions, but putting on a good show. That doesn't mean the fights were completely staged, but the contestants had to give it up a little.
So she's a bit of an exhibitionist. She wants recognition and attention. Possibly because her kind were rare (she's lonely). This, combined with her temper, also causes her to be overconfident and reckless?

I always just put it towards her thinking noone was challenging enough for her, thinking she could shrug off any opponents attack and win regardless of the situation.
