It's one of those little things that only make sense in a meta context, like various Gundam shows trying to make 'Gundam' an acronym to make the name work.

The term for "umamusume" in Japanese for the series is "ウマ娘." You'll notice that "uma" is written in katakana and not using the kanji for "horse." So while the word translates to "horse girl" from the word meaning, the choice to not use the kanji for "horse" means that they're not exactly "horse girls" in the sense of being literal horses, which makes sense if there ARE no literal horses in their universe. So perhaps in their world the kanji for "horse" was made after the existence of "umamusume" became known. Or perhaps there's other explanations. How language and words are created is an interesting topic that can be discussed in regards to this series.
There are endless speculations as to how their world functioned without actual horses and only "umamusume" since, well, horses were INCREDIBLY important in human history. And as far as we can see in the anime/game, the world of Umamusume is basically the same as ours, just with no horses and with umamusume instead.

In normal Japanese though you have "otoko no hito" / "man person" and "onna no hito" / "woman person" for "man" and "woman" in English. Maybe in universe the "uma" / "horse" acts like "hito" / "person", and distinguishes the "horse girls" from the "horse boys" (maybe "uma musuko") ?

I guess the humans in that world are horse fuckers. Unless the Uma musume reproduce asexually or girl on girl horsey can result in horse pregnancy. Or maybe they have somesort of magic spring or ritual they do to reproduce.

Isn't it also part of the lore that horses that die in our world reincarnate as uma-musume in their world? Maybe they just appear fully-formed as part of the reincarnation process and sidestep the problem of needing to be "born" entirely.

Actually, its true IRL too, with additional details on Special Week adopted mother is the women who hand-reared Special Week too. in many ways, some of the history in Uma Musume uses RL race records as inspiration along with stable hands account on the horse which is also the reason why Stay Gold has not made appearance.

The actual kanji for "horse" (while the following three are fictional). The character is derived from a pictogram of a horse showing a flowing mane, legs evolving into four dots.竹 (take) means bamboo. By the way, bamboo stilts are called "take-uma" in Japanese.The "horse" kanji as it appears in the franchise (especially the anime). As there are horse girls but no actual horses in the world of Umamusume, there are only two dots instead of four, presumably representing a running horse girl with flowing hair.Continuing by that logic, more legs means more dots. There would be eight dots if horses had eight legs like say, Sleipnir.
The style of running here is typical of the comedy anime of the 70-80s, which Maruzensky is solidly in.
