Did you never play Phantasmagoria of Flower View? Cirno, Mystia, Medicine and Merlin Prismriver take her on with varying degrees of success. Heck, there may be more, but I haven't finished all the storylines yet.

The thing here is that there was no logical way for Sanae to muster up enough strength to successfully pin Yuuka with a rollup after Yuuka essentially made Sanae her bitch. And even if there's more to combat/wrestling than power, there were literally no other options for Sanae other than tag Suwako in or hope Yuuka/Cirno got themselves disqualified somehow.
I don't think Jelly really thought this win all the way through when he made it.

Easy answer: Yuuka gets the majority of her strength from magic. As she is inside the barrier and therefore limited to physical strength and stamina only (which the barrier also limits, I think it was Yukari who mentioned in one of the earlier strips that allowing people with the stamina to shoot danmaku all night into the ring was bad, so they limited it). Sanae on the other hand has her innate abilities, plus her divine power she was channeling in the same way as Reimu was. That coupled with the fact Yuuka was focused on causing as much pain as possible rather than actual lasting damage would have let her hang on I'd guess.
