Oh god...when I read that and the other myths in the library in Pokemon Diamond I got so freaked out, because those were SERIOUSLY mature and WAY too complicated for children to read, which is bad because the games are intended for children.

Plus (as I recall) in the Japanese pokedex entry for Farfetched, one of the first thing's mentioned is how tasty it is. On a side note with regards to the pokeverse food supply. it makes the episode with the Miltank dairly farm a little odd. Ash makes remarks as to how much tastier Miltank milk is that waht he is used to. In the Pokeverse, isn't ALL the milk (well the "cow" milk) Miltank milk?

There used to be normal animals, but they've been retconned out. Sometimes I get confused on the Pokedex entires...because Paras (or Parasect's?) entry mentioned China, and I don't think China exists in the Pokeverse either..
I assume there ARE normal animals, just very few...i mean how could pikachu be the electric mouse-type pokemon if mice don't exist? Same goes for tiny turtle(squirtle) and so on.

There ARE normal mice. They're called Rattata. But really, I've never seen a 'regular' animal in any pokemon episode I've ever seen, because having both just seems silly. The reason why they don't mention eating them because they're pretty much all domesticated and integrated in society. Having a kid talk and play with his Charmander while eating a roasted one is awkward, don't you agree?

Going along with that, wasn't it mentioned somewhere that Mew was spotted in South America?

Well if you look at the larger map of the Pokemon areas they are all (mostly?) on the Japanese mainland so while they rarely mention the rest of the world, it's not like it doesn't exist in the Pokemon universe.
