That's due to Hoyoverse using standardized model templates.
They have: "Tiny child." "Young man." "Young woman." "Adult Man" and "Adult Woman."
They can squash and stretch them somewhat but are kinda stuck with their proportions.
Unlike say, Star rail, which has very diverse character models.
