    Hang in There, Kogasa-san 3874

The smaller the milling ratio, the smaller the rice grains are pared down. Since that requires accordingly more rice, I figured that's what makes Junmai Daiginjō so expensive. Well, that's probably not the only reason it's so pricey.

When I go to a bar, they have an incredible variety of sake from all over the country, so I get get totally lost on which to drink. Even within the same brand, they have so many types! (^^;)

It lives, it was just delayed.

I have to attend to some RL stuff, so I'll have to take time later to focus on the chart and small writing in panel 3.

I'm also a little unsure of Aya's last line. It looks like こればっらはねー or これぱっらはねー, but I'm not making full sense of either.

    I think it's こればっかはねー.

Thanks. I was too unfocused to work out that handwriting. I still need to defer translating the small writing in panel 3 until later, but I figured I could fix this line for now.

...Hmm, I think the initial translation "No other way about it" was rather more correct. The original text is not こればっかだね.

You think so? I took こればっか(り) to refer to the vast assortment of nothing but sake, but all right.

Almost forgot: Reader-added tags include "Japanese sake," "Bottomless swamp," and "Welcome...to the rabbit hole." ("Swamp" is the Japanese idiomatic equivalent of "rabbit hole" for something you could metaphorically fall into endlessly, and it still kind of works in English. It felt more natural to me to keep it as "swamp" for the second tag.)

The chart is missing the first part, but it's okay since Junmai and Futsu Shu rarely compare (though sometimes you find a good one)

    No other way about it.
    Confusion
    Junmai Ginjō
High-quality ake made with rice milled to 60% or less
    At an izakaya...
    Ginjō
    Milling Ratio --------- 70% or less --------- 60% or less --------- 50% or less --------- 60% or less, or with special brewing method  Rice/Malted Rice    + Alcohol --------- Honjōzō --------- Ginjō --------- Daiginjō --------- Special Honjōzō Rice/Malted Rice ---------     -------- --------- Junmai Ginjō --------- Junmai DaiGinjō --------- Special Junmai
    Ginjō, jōzō...
I have no idea what's what. Jōzō: brewing. Ginjō: sake made with rice milled to 60%, with no added alcohol
    Daiginjō
Sake made with rice milled to 50% or less
    Honjōzō
Sake brewed with no added saccharides and 120 l/ton or less of seed alcohol
There's a ton of Japanese sake types.
This is basically how you tell them apart.
They're divided up by milling percentage.
They're also differentiated by whether they just use rice or have other alcohol mixed in.
Not included in this chart: Standard Sake
I have no idea which to buy...
All you can do is try them and judge based on which ones you like.
