Yorihime summons a couple of gods (cuz' her power is to summon any god she knows the name of/correct chant for, and she knows the names/chants for over a 1,000 of them), and Anderson dies miserably at the hands of pagan deities... for the irony of it (and cuz' Yorihime is a b*tch). Or Toyohime trashes him with high level magic (since even Yukari admitted inferiority to Toyohime). So, yeah, Anderson isn't touching them.
As for Remilia, it depends on how vulnerable she is to his religious weapons (which are really the only reason he's any kind of a fight for Alucard). Touhou vampires are not weak to religious stuff (canonically Remilia thinks crosses are "cute", can't understand why anyone would think she fears them, and even uses their image in one of her attacks), so odds are his blessed bayonets won't hurt her any more than regular weapons, which means she will regen from them.
Also, like Cell from DBZ, she can regenerate as long as she has even a little bit of her body left and Anderson has no attacks that vaporize the target completely, even with his Helen's Nail power-up, so the odds are actually heavily against him. It doesn't help that he can't fly and she can just hover out of his throwing range and danmaku spam him until his regen finally wears out.
Her fate manipulation power is not an issue though. One of the canon works (outside the games, I think it was either PMiSS or Bohemian Archive), finally cleared things up and she can't outright manipulate fate so much as she can influence it and even then she can't inlfuence the fate of anyone who has a predetermined destiny (such as they are fated to do a certain thing or be a certain place or people who are simply destined for greatness, which is why her power was worthless against the destined hero, Reimu).
Over all, things appear to favor Remilia heavily, though I have no doubt Anderson would put up an epic fight even without the Helen's Nail power-up. Remilia is basically a weaker version of full-power Alucard (she can't summon an army of everyone she's ever killed), but she lacks Alucard's weakness to religious stuff and may not have his weakness to silver either (her only confirmed weaknesses are sunlight and running water, everything else is fanon speculation).

Youkai dont regenerate, they just respawn. So, no matter how many times Alexander split Remi in half, it is useless and only make her angryer.

Alucard is immortal as well. Doesn't stop Anderson from fighting him.

Vampires have tremendous physical abilities and magical power: they are able to uproot a thousand-year-old tree single-handedly, to run through the human village within the blink of an eye, to summon many devils with a single word, to turn into bats or even mist to intrude anywhere they please, and they can recover within a single night even when their body is blown away, so long as their head is intact.
Remi can summon some kind of devil as well, maybe they will be fewer in number than Alucard's undead, but they might be stronger in power, also danmaku is kind of an anti-army thing so I don't think they are any of a trouble to Remi.
and the only thing in Gensokyo held Remi back was the spell card rule, if Anderson fight Remi without that rule, with the speed that "run through the human village within the blink of an eye" and the strength to "uproot a thousand-year-old tree single-handedly" of Touhou vampire, I don't Anderson can put of much of a hand to hand fight with Remi.
Everyone's asking whether or not Remi can stand a chance against Anderson, and I'm over here wondering whether or not Anderson would even be allowed into Gensoukyou, let alone be allowed to go about his business. Just saying, letting a monster hunter loose in the last bastion of fantasy seems like a bad idea...
