Youkai have different standards than humans. Aya for example doesn't like people talking lightly about yakitori stands (which serve fried chicken) despite being a crow tengu. Heck, she was even upset with Yukari for disciplining Ran, simply because he was another animal.

No, the source is the interviews Aya conducts in the Touhou Bunkachou book. There's a lot of interesting things in there, translations are on the Touhou wiki.

I don't think you even have to go that far into it. She's a bird, so its disturbing to see other birds fried and cooked, due to similar physiology. Just because monkeys are only cousins to humans doesnt mean the average person wouldnt be disturbed at seeing one cooked and eaten.

Countless millennia have honed the modern chicken into what he is today: a fat, lazy, and very stupid bird whose sole purpose in this life is grow and be slaughtered. It has no other possible future and no other destiny, it lives to be consumed.
So would you deny the noble chicken the completion of it's purpose in life? Would you let it's tender, juicy, delicious flesh go to waste? Of course not, so if you truly care about the chicken you must eat him, it's what he would have wanted.
There are plenty of people who would. Bushmeat hunting is one of the reasons for the decline of not just some monkey species, but some of the great apes as well.
I don't know why a sparrow(or tengu) would care so much about chickens. As someone who's raised chickens before I can safely say they aren't a very sympathy worthy animal. I've personally seen chickens eating other chickens... and not dead processed ones either.

Don't worry, the chicken wanted to be eaten. The most revolting thing you've ever heard? Surely, it's better than eating a chicken that didn't want to be eaten?
Of course, you know, there's no guarantee that it's actually chicken in there - the way that the two green things pop up from where the bite mark is, the way that Kentucky Fried Myschi tends to have her hat, I kind of wonder if it isn't actually another night sparrow, and she recognized it after taking a bite.
