Why do I get a bad feeling in my stomach that by the end of the series, Rizure will be a barely-functioning flesh golem, and Kusuriuri-san will just become more and despondent because he couldn't save her the way he thought he could?

Considering that Adamska also was like that, I think the sutures are "just for show" to designate where the prosthesis begins. I.E. they'll still be there years later even if she has full control over that arm and it's just like new, at least until/unless there's some miracle drug brought in that fully regenerates the original limbs.

Again, I think the story is going to remain true to the title, and if it's not going to be a happy ending with her using only sewn-on donor parts, then he's eventually just going to break down and do some quest for ingredients for a solve-all-the-plots-problems potion so that it can be a happy ending.

The author has made art of her in an "after" state (you can see one in the cover page)- assuming it continues heading in that direction, she's going to be scarred, but not a vegetable. Worth remembering, she started this story borderline catatonic and has only improved cognitively and physically since. Limb gangrene aside, that is. Before anyone brings up her amnesia, considering the state she was in at the start of the story... she's almost certainly better off from a mental health perspective without those memories.

If you mean this, then I wasn't aware of it before now (just looking at the pool and going to the last pages when catching up), but she has scars and still has a chunk missing from her ear, but she has two working eyes and what appears to be two working arms. She appears to be wearing long gloves so that you can't see where her stitches would be if she was just using sewn-on arms, so it might be that she's taken a potion that regrows limbs, or she might have sewn on limbs and just wears gloves to cover up the sutures.
(Also, it's not past artists to draw a transitory state for a cover if they want to make a reveal later, since it's kind of dumb to make your cover a spoiler if there's going to be a surprise transformation later.)
Still, it's entirely possible for her to be the eponymous "happy" with just "replacement parts" if that's how the author wants to take the story, I'm just saying that the idea that she degenerates after this and loses her happiness is unlikely unless it's going to just spur some action that actually does resolve those issues, like making said miracle potion.
I don't mean to take away from the serious plot discussion, but these two ladies are the best wingwomen for our doc here.
Around one week has passed since we returned to the workshop. Post-operation recovery is progressing with no issues and since the scars all over her body seemed to be healing nicely as well, I enlisted Ane and Mone's assistance with bathing her.
